Recipe Round-Up: Soups, Stews & One-Pots

It’s December! This is the month of winter beginning, and if you’re anything like me I can’t seem to get enough warming, nourishing soups, stews and one-pot dinners. I absolutely love throwing a few things in my crock pot in the morning and coming home to a delicious, savory and super easy dinner. Whether it’s on the stove or in the crock pot, I’ve had a collection of recipes that are my go-to’s for most of the winter.


Here are some at the top of my list:

Slow Cooker White Bean, Sausage & Kale – this is my favorite crock pot recipe with three of my favorite ingredients. The flavors of this soup are to die for, and it makes a hefty portion for extra dinners throughout the week.

Quick Red Lentil Curry with Spinach – When you’re in the mood for some savory indian curry spice, this lentil curry with a side of brown rice will definitely quench that craving and it’s one of the quickest one-pots to make.

One Pot Spicy Tai Noodles – for the asian flavor noodle addition to the one-pot list, this makes a delicious dinner that’s relatively quick and easy to make, and serves as an excellent side with some roasted broccoli.

Butternut Squash & Apple Soup – it would be a shame to go through the winter soup months and not take advantage of some squashes. This butternut soup recipe is my all-time favorite for squash recipes, and it’s perfect with some rustic, whole grain bread.

Miso & Ginger Butternut Squash Soup – for a less sweet version of the butternut squash soup, adding miso instead of apples makes for a much more savory flavor.

Kitchari – almost every morning (or at least least 3 days per week) I’ve got a pot of this on the stove. This is one my favorite breakfast foods, and it’s so nourishing and easy on the stomach.

Sprouted Mung Bean, Sage & Butternut Squash Soup – if I have two favorite ingredients for any soup, it’s beans with sage. This makes for a hearty, protein rich and nourishing stew thats not only is a delicious one pot dinner, it makes your house smell amazing.

Carrot & Harissa Soup – this is my go to for when I’m not feeling well, or I’m coming down with a cold. I bump up the garlic in this recipe a bit, and it makes a large amount that I eat on for a couple of meals. It’s easy on the stomach, filled with nutrients and is really easy to make.

Cream of Broccoli & Cashew Soup – This is probably one of the most nutrient dense, delicious and satiating soup recipes I’ve ever tried. Broccoli is my favorite vegetable, so I’m partial to anything made from broccoli, but even folks who aren’t that into broccoli I’ve made this for and they absolutely love it!
